product knowledge to provide customers with recommendations on their favorite
dish and protein.
Job description:
Wild Fork is looking for a reliable Food Truck Manager. Must be able to manage
an efficient operation and responsibility of food truck, including cleanliness,
equipment care, food quality/consistency, food safety, Truck Maintenance and
driving; to ensure every customer receives the best possible food experience and
receives a Five-Star experience. Possess strong interpersonal skills with
genuine strength and aptitude for meeting and interacting with new people.
The Food Truck Manager is responsible for operating and managing food service
operations on the food truck. Will ensure all employees follow Wild Fork
in-house policies and procedures and meet with all Health Department
requirements and regulations.
The manager is also responsible for the overall operations of the back of the
house and kitchen area of the restaurant; coordinate food samples and stock, and
make sure everyone is trained on proper food preparation and kitchen safety
techniques, also ensure the kitchen is properly cleaned on a regular schedule,
food is disposed of properly and the kitchen meets all sanitation standards.
Primary Responsibilities:
? Oversee the day-to-day operations on food truck, and kitchen.
? To be able to prepare and Grill / Cook food in a fast-food mobile restaurant
setting in a timely manner. In this position one can expect to work at multiple
stations on the truck: Driver, Runner, Griller and housekeeping.
? Ensure employees follow proper sanitation procedures.
? Preside over food truck employees, including cooks, food preparers, and other
employees.
? Ensure food safety standards are maintained while food is being cooked.
? Maintain sanitation, health, and safety standards in work areas.
? Prepare and serve food to customers.
? Respond to customer requests, and inquiries.
? Maintain equipment including refrigerator, cookware and preparation/inventory
spaces.
? Ensure customer dining experience is satisfactory and to Wild Fork Brand
Standards.
? Train and coach team members
? Housekeeping: Cleaning of the truck and kitchen, clean food preparation areas,
cooking surfaces, and utensils.
? Cook batches of food, such as Beef, chicken, lamb and other proteins, which
are prepared to sample are kept warm and safe.
? Measure ingredients required for specific food items being prepared.
? Verify that prepared food meets requirements for quality and quantity.
? Attention to detail, especially in regard to food standards, costs, and
safety.
? Leadership in the back of house, rallying their team during busy shifts, and
resolving conflicts.
? Organizational skills in ordering and receiving shipments, cleaning schedules,
and stock area.
? Need to accurately and easily communicate standards, and cooking methods to
staff.
? The managers can expect to spend time working around hot cooking elements and
assist with meal preparation as needed.
? Checks in and puts away deliveries in the storeroom, and freezer on days
needed.
? Performs heavy cleaning, on ovens, hoods and grill as needed.
? Restock trucks with supplies needed for the next shift.
JOB REQUIREMENTS AND QUALIFICATIONS:
· High School Diploma or equivalent education.
· Knowledge of the safe operation and maintenance of light trucks.
· Knowledge of Ontario traffic laws and safe driving practices.
· Ability to operate assigned equipment and vehicle in a safe and legal manner.
· Ability to use effective methods of receiving, storing, and issuing equipment
and supplies.
· Ability to understand and carry out oral and written instructions.
· Ability to establish and maintain cooperative working relationships.
Licenses and Certifications:
· Good to have a valid Class G driver’s license that allows the
applicant/employee to legally operate a motor vehicle in Ontario. License must
be maintained for the duration of the assignment/contract.
· Copy of current driving history (dated within six (6) months from the date
printed) issued by the Department of Motor Vehicles at time of application.
· Hold or be able to acquire a Material Handling Equipment Certification
· Culinary Art Certification
