We are seeking a qualified & experienced Sous Chef. This is a Full Time permanent position. DUTIES & RESPONSIBILITIES:
- Will manage and operate the kitchen according to standards in absence of Executive chef.
- Ensure consistency in the preparation of all food items for a la carte and/or buffet menus according to hotel recipes and standards.
- Conduct daily pre-shift meetings/briefings to the kitchen team.
- Ensure all kitchen team employees are aware of and practicing the standards, policies and procedures, including Health & Safety, sanitation requirements, Brand Standards and Company policies and procedures.
- Follow all standards, policies and procedures, including Health & Safety, sanitation requirements, Brand Standards and Company policies and procedures.
- Liaise with the Food & Beverage Management team to keep an open line of communication regarding guest feedback and any other concerns that may arise.
- Distribute work assignments for line staff.
- Receive products and place orders as directed by the Executive Chef.
- Ensure consistent guest and working experience by actively supervising the team and resolving issues, as they arise.
- Maintain and enhance the food products through menu development and presentation.
- Have full knowledge of all menu items, daily features, and promotions. § Interact with guests in the dining room, i.e., meet guests to ensure their experience met and exceeded their expectations.
- Balance operational, administrative and colleague needs.
- Ensure proper staffing and scheduling in accordance with labour guidelines.
- Ensure the cleanliness and maintenance of all work areas, utensils and equipment.
- Complete other duties as assigned by the Executive Chef and/or General Manager.
- May include administrative duties in absence of Executive Chef, such as on-line ordering, payroll, email communication, review of Banquet Event Orders, etc.
MINIMUM QUALIFICATIONS AND SKILLS:
- Previous leadership experience in the culinary industry.
- Diploma in a Culinary Discipline.
- Red Seal certification or equivalent.
- Computer literate in Microsoft Window applications.
- Strong interpersonal skills.
- Strong problem solving skills.
- Must be flexible to work days/evenings, weekends, and holidays when required.
- Must be able to work in a team environment and have a positive approach in dealing with a diverse group of peers and clients – ability to demonstrate patience, tact, and diplomacy at all times.
- Able to work well under pressure and multi task in a fast paced environment.
- Must be able to lift up to 50 lbs.
COMPENSATION: Salary is under review and is subject to skills, abilities and qualifications.
