The Chef de Cuisine is the proud ambassador of Hawthorn online and in the community, bringing a strong and engaging social media presence and will proudly represent Hawthorn at key city events. Working in partnership with the General Manager, Hawthorn Dining Room & Bar you will execute the smooth and flawless operation of the Restaurant during all meal periodsAccountable for managing the day-to-day operations of the kitchen with active presence on the floorLeading your team to deliver service excellenceEffectively recruit and onboard new colleaguesTrain, lead & develop the team in all aspects of the department and ensure service standards are followedCommunicates effectively, both verbally and in writing, to provide clear direction to the team, with the use of production lists, recipes, photos, etcMaintains colleague engagement, with the entire culinary and stewarding team. Promoting teamwork between the kitchen and all other departments.Accountable for driving revenue and profit through the development and implementation of menu design, strategies, practices and promotions while keeping with the overall conceptMaintains awareness of and ensures compliance with all food safety & hygiene standards, policies and procedures are followed at all times.Maintains a safe work environment and ensures that all health & safety standards are met, procedures followed and that colleagues have the knowledge and tools to work safely.Effectively manage the departmental budget through purchasing of production needs, inventories, pricing, and labor cost controlsConstantly drive innovation and actively promoting the restaurant within the communityActively manage restaurant social media accounts in partnership with the Restaurant GM and Marketing Manager, in accordance with Fairmont’s marketing standards. (i.e. Facebook, Instagram)Adheres to all Company policies, procedures and valuesQualificationsMinimum of four years leadership experience in a kitchen or culinary environmentRed Seal Certification preferredDiploma or Degree in Culinary Management considered a strong assetProven expertise in menu development, concept design, effective marketing strategies, and online reputation managementFlexible availability to meet business needs, including evenings, weekends, and holidaysExcellent communication skills—both written and verbal—and strong interpersonal abilitiesProficient in computer applications including Microsoft Excel, Word, and email systemsDemonstrated ability to drive revenue and profitability while maintaining exceptional colleague and guest experiencesEffective leadership and organizational capabilitiesEnergetic, self-motivated, outgoing, and a collaborative team playerIn-depth knowledge of current food and beverage trendsGenuine passion for hospitality and delivering memorable guest experiencesAdditional InformationWhat is in it for you:Employee benefit card offering discounted rates in Accor worldwideLearning programs through our AcademiesOpportunity to develop your talent and grow within your property and across the world!Ability to make a difference through our Corporate Social Responsibility activities, like Sustainability programMust be legally eligible to work in Canada.
