About the Expedition
Join a small, experienced expedition team operating along the floe edge of Baffin Island-one of the most spectacular and remote environments on earth where sea ice meets to open ocean and the Arctic comes to life. Each spring, this region becomes one of the planet’s most dramatic wildlife corridors-known for the great migration of narwhals, belugas, migratory birds, and other arctic wildlife.
Guests join Inuit guides and expedition leaders to experience this spectacle responsibly and respectfully, with a focus on sustainability, cultural connection, and world class Arctic exploration. As a Sous Chef and team member, you play a key role in keeping the team and guests energized throughout their journey.
Role Overview:
The Sous Chef will support the Lead Chef in delivering memorable, nourishing meals in a remote Arctic field camp kitchen. You will work with a mix of fresh, frozen and shelf stable ingredients, occasionally participate in day trips to the floe edge to provide lunch and support with expedition logistics. This is an extreme and often unpredictable environment where flexibility, creativity and patience are essential for this role.
Key Responsibilities
Assist in planning and preparing daily meals (breakfast, lunch, dinner, and snacks)
Create high calorie, hearty dishes suited for full day cold weather outings.
Maintain strict food-safety and sanitation standards in a remote camp environment.
Manage food inventories, rationing, storage systems and supply rotation.
Help establish, maintain, and break down the camp kitchen structure.
Ensure compliance with Arctic wildlife protocols (including polar bear safety procedures)
Contribute to a positive team culture and guest experience.
Interact positively with guests during meals or communal dining.
Assist with non-kitchen camp tasks as needed (hauling gear, melting snow for water, camp chores as needed)
Participate in safety briefings, drills, weekly overview and debrief meetings.
Stay flexible as schedules shift due to weather or wildlife activity.
Required Qualifications
Professional culinary training or equivalent firsthand experience
Ability to adapt to remote living conditions with limited resources.
Excellent organization, Communication, and teamwork skills.
Strong understanding of food safety principles.
Physically able to work in cold, outdoor conditions.
Previous cooking experience in a professional camp or expedition environment
Preferred Experience
Familiarity with Northern Cooking, High Calorie meal planning and sustainability practices
Experience supporting eco-tourism groups or culturally focused travel.
First aid or related certifications.
Previous work in expedition or wilderness tourism settings.
